Pumpkin Cream Cheese Bars Recipe

Ingredients
- 6 tbsp. unsalted, melted butter
- 1 1/2 cups sugar
- 2 eggs
- 1 can pumpkin, 15.oz.
- 1/4 cup water
- 2 cups all purpose flour
- 2 tsp. ground cinnamon
- 1/2 tsp. ground gloves
- 1/2 tsp. ground ginger
- 1/2 tsp. ground nutmeg
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. salt
For the cream cheese filling:
- 8 ounces cream cheese, softened
- 1/4 cup sugar
- 1/2 tsp. vanilla
- 1 large egg
Directions
1Preheat oven to 350F degrees and grease a 9×13 casserole or baking pan.
2Beat melted butter and 1 1/2 cups sugar in a bowl on medium speed until well incorporated. Add the 2 eggs, the pumpkin, 1 tsp. vanilla and water until smooth.
3In a separate bowl combine all of the rest of the dry ingredients and mix well and add it to the pumpkin mixture and combine until well blended. Spread about 2/3 of the batter evenly into the baking pan.
4In a another bowl beat cream cheese, 1 egg, 1/4 cup sugar and 1/2 tsp. vanilla until well mixed. Spread cream cheese mixture over the pumpkin batter and then add the remaining pumpkin batter over the cream cheese. Use a fork or knife to swirl together the batter with the cream cheese.
5Bake for 30-35 minutes, or until toothpick comes out dry. Cool completely and then cut into bars.
