Sausage and Cheese Potato Casserole
This is a hearty and meaty casserole, just right for the cooler season. Its easy to put together and perfect for a quick dinner.

- 1 lbs Italian sausage
- 4 cups cubed unpeeled red skin potatoes
- 1 cup shredded Monterey Jack cheese
- 1/4 cup chopped green onions
- 1 can chopped green chilies, drained
- 6 eggs
- 3/4 cup milk
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1/2 cup grated Parmesan cheese
1Preheat oven to 350F. Crumble and cook sausage in skillet until browned. Drain off drippings.
2Spread potatoes in greased 13×9-inch baking pan. Top with cooked sausage, Monterey Jack cheese, green onions and chilies.
3Whisk eggs, milk, salt and pepper until frothy. Pour egg mixture over sausage layer and bake for 30 minutes.
4Remove from oven and sprinkle with Parmesan cheese and bake for 15 more minutes or until eggs are set. Refrigerate leftovers.
